This is the locally famous salad that I serve at every workshop!!!! It’s so good that it’s often been described as “a salad worth taking your top off for” (mostly by me!) You will notice that this is more a list of ingredients and not a “recipe” and that’s because I trust you to make smart choices on what a salad is.
INGREDIENTS
- 1 bag or 1 bunch of kale (I always buy the triple washed bags from Trader Joe’s or the slightly larger bag from Aldi)
- 1 apple (I like Envy apples best)
- A generous handful of feta
- A handful of pepitas
- A handful of dried cranberries
- A good glug of Garlic Expressions (accept no substitute!!!)
INSTRUCTIONS
- Chop your apple into bite sized chunks.
- Dump the kale into a bowl and pick any giant stems out.
- Douse your kale in Garlic Expressions (I used about a 1/3 bottle per bag of kale from Trader Joe’s) and massage it for about a minute.
- Then add your apples, feta, pepitas, and cranberries, and give it another toss so everything is coated in dressing.
Because you’re using kale, this salad holds up BEAUTIFULLY for picnics, backyard hangs, parties- you name it! I routinely eat leftovers that have been sitting out for hours and it’s still DELICIOUS.
